In which house are there no red eggs left from the Easter table? The good news is that eggs can be kept for days and weeks when boiled, as long as you know what to do with them.

In general, hard-boiled eggs will keep in the refrigerator for 2-3 weeks, while fresh eggs will keep for about a month. There are many ideas for using up leftover red eggs. For starters, classic whole eggs can be added to minced or chopped meat as a side dish with smoked salmon.

But you can also make pasta salad with eggs, with a simple recipe:

Boil ½ package of pasta in small form and drain. We let them cool and moisten them with a little sunflower oil so that they don't stick. Chop 1 roasted yellow pepper, 2 spring onions, 1 tablespoon capers and 10 pitted olives. Put ½ cup of strained yogurt, ½ cup of mayonnaise, a little olive oil, chopped vegetables in a bowl and mix. Add the pasta, salt and pepper and enough chopped dill. Place the salad in a bowl and top the salad with 6 sliced ​​boiled eggs. Garnish with a few sprigs of dill. Like all pasta salads, you should prepare them just before serving so that the pasta doesn't soften.

The sandwich spread is also a good idea. First, place a packet (200g) of cream cheese, 3 chopped boiled eggs, 2 tablespoons of butter, 1 tablespoon of capers, 2 tablespoons of chopped parsley, salt and freshly ground pepper in a food processor. Puree the mixture and you have a delicious sandwich spread. Keep covered in the refrigerator for 2-3 days.

Finally, in Central Europe boiled eggs are made into croquettes. We mix them chopped with a thick béchamel and after they stay for a few hours in the refrigerator to strengthen the mass, they are shaped, rolled into cakes and fried.
